  1. Ganache vanille : Grattez les graines et placez les graines + la gousse dans une casserole avec 10 cl de crème liquide. Faites chauffer, puis laissez infuser une heure hors du feu minimum.   4. Base : faire fondre le praliné et y mettre les crêpes gavottes émiettées. Étaler sur une plaque a 5mm d’épaisseur et laisser durcir. Avec l’emporte pièce faire des cercles.
  5. Montage : dans le cercle mettre le cercle de praliné puis alterner une couche de ganache avec une crêpe, bien tasser à chaque crêpe pour être régulier. Enlevé le cercle et recouvrir l’ensemble de ganache, y déposer le pralin partout. Laisser au frais 1h et déguster.
